Sherry is a fortified wine hailing from Andalusia in southern Spain. It boasts a long and storied history that stretches back over millennia with origins that can be traced to the Phoenicians around 1100 BC. They introduced viticulture to the region now known as Jerez de la Frontera. The name "Sherry" is an anglicization of "Jerez". Over the centuries, the wine evolved, influenced by the Romans, Moors, and later, the Spanish, each leaving an indelible mark on its character. The fortification of the wine with distilled grape spirits began in the 17th century, to stabilize it for long sea voyages, but soon became integral to its unique character.
Sherry's distinct qualities arise from a combination of the specific grape varietals used, the unique albariza soil of the region, the solera aging system, and the mysterious development of "flor" – a layer of indigenous yeast that forms atop the wine in the barrel, imparting singular aromas and flavours. There is a wide range of Sherry styles, from the bone-dry Fino and Manzanilla to the nutty Amontillado and Oloroso, and the sweet Pedro Ximénez and Moscatel. Each style offers a distinct taste profile, suitable for different occasions and palates.
One of the most iconic brands in the Sherry landscape is Gonzalez Byass, renowned for their Fino Sherry, Tio Pepe. A standout in their lineup is the "Las Palmas" collection, which showcases the age and evolution of the Fino style. The Tio Pepe Fino 'Las Palmas' is a testament to the potential of Fino Sherries to age gracefully, with intensified flavours and complexity. This particular Sherry displays profound notes of almonds, green olives, and a salinity that is characteristic of finely aged Finos. It serves as a reminder of the depth, history, and elegance that Sherry, as a category, brings to the world of wine.
Sherry has, until relatively recently, carried the stigma of being an old-fashioned drink drunk by elderly women with blue hair, but recently, it has been regaining its popularity and rightly so.
